What’s makes Montagé sea salt crystals different from commonly available flaky and pyramid salt?

Unlike commonly sold pyramid salt, Montagé sea salt crystals take between 3 to 5 days to form their shape, depending on size of the crystal. Many salts on the market today come from areas where the sun is limited. In order to obtain the open salt pyramid shape, many Salinas heat the concentrated brine in indoor evaporation tanks. When salt is obtained through the heating process, the result is a drier salt. When salt has a lower moisture content, it dissolves faster and the pyramids lose their shape quickly.

Montagé salt is evaporated under the sun in solar evaporation pans and its moisture content is higher.
